The soybean or soya bean (Glycine max) is a species of legume which has numerous uses : soy milk, tofu, flour, proteins (soybean protein isolate has a biological value of 74, whole soybeans 96, soybean milk 91, and eggs 97), fermented sauce, and the soy oil (saturated fat, monounsaturated fat and polyunsaturated fat, mainly as linoleic acid).

Isoflavones are part of a group of plant-based chemicals named Phytoestrogen. These chemicals act like a weaker form of estrogen in the body. The main isoflavones in soy are genistein and daidzein. Isoflavones found in red clover include formononetin, biochanin A, daidzein, and genistein.- Nutrition : Estrogens are hormones that influence sexual and reproductive development, primarily in women.
